  • 2 tablespoons butter, softened, plus 1 tablespoon butter, melted divided
  • 1/2 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 2 1/2 cups chicken broth
  • 1 1/4 cups white long-grain rice
  • 1 (10.75-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 teaspoons Dijon mustard
  • 1 cup cheddar cheese, shredded
  • 1/3 cup parmesan cheese, grated
  • 1 cup chicken, cooked
  • 1 cup ham, diced
  • 9 slices Swiss cheese
  • 1/3 cup seasoned breadcrumbs

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease a 9x13-inch casserole dish.

Step 3 -Melt 2 tablespoons of the softened butter in a pan, then add the diced onions and cook them until softened, about 3-5 minutes.

Step 4 -Add the garlic, the garlic powder, and the thyme and cook until fragrant, about 1 minute.

Step 5 -Stir in the olive oil, the chicken broth, and the rice.

Step 6 -Bring the rice mixture to a boil.

Step 7 -Reduce the heat to a simmer.

Step 8 -Cover and allow it to cook for 15 minutes, undisturbed.

Step 9 -Remove the pan from the heat and uncover.

Step 10 -Let the rice mixture sit for 10 minutes.

Step 11 -Stir in the cream of chicken soup, the sour cream, the milk, the Dijon mustard, the cheddar, the parmesan cheese, the chicken, and the ham.

Step 12 -Transfer the chicken mixture to the prepared casserole dish.

Step 13 -Layer the Swiss cheese on top of the chicken mixture.

Step 14 -Bake until the cheese is bubbly and melted, about 15 minutes.

Step 15 -Mix together the remaining melted butter and the breadcrumbs.

Step 16 -Sprinkle the breadcrumb mixture on top of the casserole.

Step 17 -Bake for 10 minutes, uncovered.

Step 18 -Allow the casserole to cool before serving.

Step 19 -Serve.
