When you mix comfort food with any course, you know you're in for a good time. But the party really gets going when the selected course is apps! Can you imagine kicking off a fun, hip soiree with a literal mound of crispy French fries topped with creamy, filling, chicken pot pie goodness?! Your guests will be silent, but not because they're not having a blast! No, no. More like they'll be putting handfuls after handfuls of these yummy snacks into their mouths so there will be no time for chatting! Get the party started and full of good, Southern flavors thanks to Chicken Pot Pie Poutine!
Ingredients
- 1 (28-ounce) bag frozen French fries
- 4 tablespoons butter
- 1 carrot, diced
- 1 stalk celery, diced
- 1/2 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme, chopped
- 3 tablespoons all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1/4 cup heavy cream
- 1 1/4 cups rotisserie chicken, cooked and shredded
- 1 1/4 cups frozen peas
Directions
Step 1 -Bake the fries according to the package directions.
Step 2 -While the fries are baking, in a large skillet over medium-high heat, melt the butter.
Step 3 -Add the carrot, the celery, and the onion to the melted butter and cook until they are soft, about 8-10 minutes.
Step 4 -Stir the garlic and the thyme into the veggie mixture and cook until fragrant, about 1 minute.
Step 5 -Sprinkle the veggie mixture with the flour and toss to coat.
Step 6 -Cook the veggie mixture, while stirring, about 2-3 minutes.
Step 7 -Whisk the chicken broth and the heavy cream into the veggie mixture until smooth.
Step 8 -Bring the veggie mixture to a simmer and add the chicken and the frozen peas.
Step 9 -Simmer the chicken mixture until it is warmed through.
Step 10 -Top the fries with the chicken mixture.
Step 11 -Serve.
