Ingredients

  • For the sugared cranberries:
  • water, to taste
  • granulated sugar, to taste
  • fresh cranberries, to taste, rinsed and dried
  • For the margarita:
  • 1/3 cup unsweetened coconut milk
  • 2 teaspoons honey or granulated sugar
  • ice, to taste
  • 2 ounces silver tequila
  • 1/2 ounce coconut rum
  • 1/2 ounce orange liquor
  • 1/2 lime, juiced
  • fresh mint, to taste, for garnish

Directions

Step 1 -Line a baking sheet with parchment paper.

Step 2 -In a medium saucepan, add equal parts of the water and the sugar and bring to a boil.

Step 3 -Reduce the heat to low and simmer the sugar-water mixture until it forms a syrup.

Step 4 -Stir the cranberries into the simple syrup until they are fully-coated, then transfer the saucepan from the heat. Stir for 1 minute.

Step 5 -Use a slotted spoon to transfer the cranberries to the prepared baking sheet and let them rest until they dry out, about 1 hour.

Step 6 -Add more of the sugar to a large plate and roll the dried cranberries in it, in batches, to coat. Set them aside.

Step 7 -In a small saucepan over medium heat, add the coconut milk and the honey and bring to a simmer. Cook for 1 minute.

Step 8 -Transfer the saucepan from the heat and let the milk-honey mixture cool. To quickly chill, add a few of the ice cubes.

Step 9 -Fill a cocktail glass with the ice.

Step 10 -In a cocktail shaker, add the tequila, the coconut rum, the orange liquor, the lime juice, and the milk-honey mixture, cover, and shake to mix, about 1 minute.

Step 11 -Strain the margarita into the prepared glass.

Step 12 -Serve the margarita garnished with the sugared cranberries and the mint.
