All the campfire classics in one baking dish... well, not s'mores. But you can bring those for dessert! Cowboy Campfire Casserole is the best kind of bean mixture: creamy, hearty, savory, and with plenty of subtle and delicious flavors. Oh, and there's just so much meat packed in. Ground beef, bratwurst, and bacon... maximum succulence achieved! This sweet, tangy, and satisfying main course is old-school, night-under-the-stars eating... but the outdoors are optional!
Ingredients
- 1/3 cup brown sugar, packed
- 1/2 cup ketchup
- 1 teaspoon ground mustard
- 1/2 cup barbecue sauce
- 1/3 cup white sugar
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces bacon, cooked and crumbled
- 8 ounces bratwurst links, fully cooked, cut into 1-inch slices
- 8 ounces ground beef, cooked and drained
- 1 (16-ounce) can kidney beans, rinsed and drained
- 1 (16-ounce) can pork and beans
- 1 (16-ounce) can chili beans
- 1 (15.25-ounce) can lima beans, rinsed and drained
- dried chives, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 2-quart baking dish with cooking spray.
Step 3 -In a large bowl, add the brown sugar, the ketchup, the ground mustard, the barbecue sauce, the white sugar, the chili powder, the salt, and the black pepper and whisk to combine.
Step 4 -Add the bacon, the bratwurst, and the beef to the brown sugar mixture and stir to combine.
Step 5 -Add the kidney beans, the pork and beans, the chili beans and their juices, and the lima beans to the meat mixture and stir to combine.
Step 6 -Transfer the meat mixture to the prepared baking dish.
Step 7 -Bake, uncovered, until heated through, about 1 hour.
Step 8 -Serve garnished with the dried chives.
