Rustic and deliciously hearty, a bowl of this beefy, creamy, cheesy grub is sure to fill you up after a hard day's work on the ranch (or at the office or whatever it is you do). You'll fall in love with the tender potato gnocchi and don't get us started on that crispy bacon. A Western dream come true, that's Cowboy Gnocchi!
Ingredients
- 1 1/4 pounds lean ground beef
- 1 medium onion, chopped
- 8 strips bacon, cooked and crumbled, divided
- 1 (16-ounce) package potato gnocchi, cooked and warm
- 1 cup water
- 1/2 cup heavy cream
- 1 tablespoon ketchup
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup tomatoes, chopped, for topping
- 2 green onions, sliced, for garnish
Directions
Step 1 -Preheat the oven to the broiler setting.
Step 2 -In a large cast-iron skillet over medium heat, add the beef and the onions and cook, while crumbling the beef, until the meat is no longer pink, about 4-6 minutes. Drain the excess grease.
Step 3 -Stir the bacon crumbles into the beef mixture.
Step 4 -Add the cooked gnocchi, the water, the heavy cream, and the ketchup into the beef mixture and stir to combine.
Step 5 -Bring the gnocchi mixture to a boil.
Step 6 -Reduce the heat to medium and cook the gnocchi mixture, while stirring, until the sauce has thickened, about 3-4 minutes.
Step 7 -Add the salt and the pepper to the gnocchi mixture and stir to combine.
Step 8 -Evenly sprinkle the cheese over the gnocchi mixture.
Step 9 -Transfer the cast-iron skillet to the oven and broil about 3-4 inches from the heat source until the cheese is melted, about 1-2 minutes.
Step 10 -Serve the gnocchi mixture topped with the tomatoes and the green onions.
