Cozy Apple Cake is a warm hug in dessert form. With tart bites of apple folded into the tender cake, notes of smoky brown sugar and vanilla perfuming each forkful. Ingredients
- For the apple cake:
- butter, to taste, softened, for greasing the pan
- 1 1/2 cups brown sugar
- 1/3 cup canola or olive oil
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 1/2 cups flour
- salt, to taste
- 2 1/2 cups Honeycrisp apples, optionally peeled and chopped
- For the cinnamon-sugar topping:
- 1/2 cup white sugar
- 1 teaspoon cinnamon
- 1 tablespoon butter, melted
- salt, to taste
- powdered sugar, optional, to taste, for topping
Directions
Step 1 -Preheat the oven to 325 degrees F.
Step 2 -Using the extra softened butter, grease a 9x13-inch baking pan.
Step 3 -In a large mixing bowl, add the brown sugar, the oil, the egg, the buttermilk, and the vanilla and mix until combined.
Step 4 -Add the baking soda, the flour, and the salt to the brown sugar mixture and mix until just combined into a batter.
Step 5 -Add the apples to the batter and fold to combine.
Step 6 -Pour the batter into the prepared baking pan, spreading it out evenly.
Step 7 -In a small bowl, add the white sugar, the cinnamon, 1 tablespoon of the remaining melted butter, and the salt and mix to combine.
Step 8 -Sprinkle the topping evenly over the batter in the baking pan.
Step 9 -Bake the cake until a tester inserted into the center comes out clean, about 45 minutes.
Step 10 -Serve dusted with the powdered sugar.
