Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 tablespoon plus 1 teaspoon olive oil, divided
  • kosher salt, to taste
  • black pepper, to taste
  • 1 bulb fennel, cored and thinly sliced
  • 1 large red pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 4 Italian sausage patties
  • whole grain mustard, to taste
  • 4 sesame buns, toasted
  • fennel fronds, optional, for topping

Directions

Step 1 -In a large bowl, whisk the lemon juice, the honey, 1 tablespoon of the oil, the salt, and the pepper together.

Step 2 -Add the fennel, the red pepper, and the onion to the lemon juice mixture and toss to combine.

Step 3 -Allow the fennel mixture to sit, tossing occasionally, for 15 minutes.

Step 4 -Heat a grill pan over medium heat.

Step 5 -Rub the sausage patties with the remaining oil, then grill them until they are just cooked through, about 4-5 minutes per side.
