Ingredients

  • For the taco meat:
  • 1 (4-pound) beef chuck roast, boneless
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 (12-ounce) bottle beer or 1 cup beef broth
  • 1 (28-ounce) can pickled jalapeño peppers, undrained
  • 1 large onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • For serving:
  • corn tortillas, to taste
  • cotija cheese, to taste, crumbled
  • lime wedges, to taste
  • fresh cilantro leaves, to taste
  • radishes, to taste, sliced

Directions

Step 1 -Sprinkle the roast with the salt and the pepper.

Step 2 -In a large skillet over medium-high heat, heat the oil.

Step 3 -Add the roast to the oil and brown on all sides.

Step 4 -Transfer the browned roast to a 5-quart slow cooker.

Step 5 -In the same skillet over medium heat, add the beer and stir to loosen the browned bits from the bottom.

Step 6 -Pour the beer mixture over the roast.

Step 7 -In a large bowl, add the jalapeños, the onion, the garlic powder, and the chili powder and stir to combine.

Step 8 -Sprinkle the jalapeño mixture over the meat.

Step 9 -Cover the slow cooker and cook on low heat until the roast is tender, about 6-8 hours.

Step 10 -Transfer the roast to a plate and use two forks to shred it.

Step 11 -Strain the cooking juices into a bowl, reserving the vegetables and 2 cups of the juices. Discard the remaining juices.

Step 12 -Skim the fat from the reserved juices.

Step 13 -Return the shredded beef, the reserved vegetables, and the reserved juices to the slow cooker and cook until heated through.

Step 14 -Serve the shredded beef in the tortilla shells, garnished with your desired toppings.
