The Easy Breakfast Skillet is a simple and hearty breakfast you can whip up in just 30 minutes, perfect for when you’re on the go! This dish is filled with smoky ham, crispy potatoes, fluffy eggs to keep you fueled and happy; you can even add green chiles if you like some spice to really get you fired up! Save some leftovers from this Easy Breakfast Skillet and enjoy it throughout the week for a quick, convenient breakfast.
Ingredients
- 1/2 pound cooked ham, diced
- 2 tablespoons vegetable oil
- 5 cups frozen potatoes
- 6 large fresh eggs
- 1/4 cup canned diced green chiles, optional
Directions
Step 1 -Saute the ham lightly in a non-stick pan over medium-high heat.
Step 2 -Add the oil and potatoes and saute until lightly browned and heated through, about 15 minutes.
Step 3 -Break the eggs into a bowl and combine with the chiles.
Step 4 -Add the egg mixture to the skillet, and cook until the eggs are soft and fully cooked, about 3-4 minutes.
Step 5 -Serve!
