Ingredients

  • For the chicken:
  • 1 tablespoon vegetable oil
  • 1 1/2 pounds chicken breasts, boneless and skinless, chopped into bite-sized chunks
  • 1/3 cup orange juice
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 1 1/2 tablespoons cornstarch
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, freshly grated
  • 1/4 teaspoon ground black pepper
  • Optional, for serving:
  • green onions, to taste, sliced
  • sesame seeds, to taste
  • rice, to taste, cooked and hot
  • broccoli, to taste, cooked and hot

Directions

Step 1 -In a wok or a large skillet over medium-high heat, add the oil.

Step 2 -Add the chicken pieces and cook, turning them once, until browned and mostly cooked through, about 3-6 minutes.

Step 3 -In a mixing bowl, add the orange juice, the soy sauce, the brown sugar, the water, the cornstarch, the garlic, the ginger, and the black pepper, and whisk until well-combined.

Step 4 -Pour the orange juice mixture over the chicken pieces in the skillet and stir to coat.

Step 5 -Bring the chicken mixture to a low boil, then reduce the heat to low.

Step 6 -Allow the chicken mixture to simmer until the sauce has thickened and the chicken pieces reach an internal temperature of 165 degrees F, about 5-8 minutes.

Step 7 -Top the chicken mixture with the green onions and the sesame seeds.

Step 8 -Serve with the rice and the broccoli.
