Ingredients

  • 12 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 pound bacon, cooked and chopped
  • 2 cups cheddar cheese, shredded
  • 2 jalapeños, seeded and diced
  • fresh cilantro, optional, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 12-cup muffin tin with cooking spray.

Step 3 -In a large mixing bowl, add the eggs, the milk, the salt, and the black pepper and whisk to combine.

Step 4 -Evenly divide 1/2 of the bacon, 1/2 of the cheese, and 1/2 of the jalapeños among the prepared muffin cups.

Step 5 -Pour the egg mixture into each prepared muffin cup, filling each cup about halfway.

Step 6 -Evenly divide the remaining bacon, the remaining cheese, and the remaining jalapeños among the prepared muffin cups.

Step 7 -Bake until the eggs are set, about 20-25 minutes.

Step 8 -Serve garnished with the cilantro.
