You may be used to dipping your Buffalo chicken, but there's no need for that here. This is the Easy Stuffed Buffalo Chicken — the dipping sauce is already cooked right in! Inside every spicy, savory chicken breast is a melty, gooey, creamy, and cooling heart of zest ranch and tangy cream cheese! With Easy Stuffed Buffalo Chicken, you'll know you've found the secret dish that transforms snacking wings into a fancy meal!
Ingredients
- For the chicken:
- 1 (8-ounce) package cream cheese
- 1/2 cup cheddar cheese, shredded
- 1/4 cup ranch dressing
- 1/4 cup green onion, chopped
- 4 chicken breasts, boneless and skinless
- 4 tablespoons olive oil, divided
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 cup Buffalo sauce, store-bought or homemade
- Optional, for serving:
- ranch dressing, to taste
- green onions, to taste, chopped
- blue cheese, to taste, crumbled
Directions
Step 1 -In a bowl, add the cream cheese, the cheddar cheese, 1/4 cup of the ranch dressing, and 1/4 cup of the green onions and stir to combine.
Step 2 -Rub the chicken breasts evenly with 2 tablespoons of the olive oil.
Step 3 -Season the chicken breasts evenly with the salt and the pepper.
Step 4 -Cut a wide pocket horizontally in each of the chicken breasts, making sure not to cut all the way through.
Step 5 -Stuff each of the chicken breasts evenly with the cream cheese mixture.
Step 6 -In a large skillet over medium-high heat, add the remaining olive oil.
Step 7 -Add the chicken breasts to the hot oil and cook, flipping them once, until browned but not quite cooked through, about 3 minutes per side. You may need to brown the chicken in batches to avoid overcrowding.
Step 8 -Add all of the chicken breasts to the skillet in a single layer.
Step 9 -Pour the Buffalo sauce over the chicken breasts and cover the skillet.
Step 10 -Simmer the chicken in the Buffalo sauce, covered, until the chicken breasts reach an internal temperature of 165 degrees F, about 15 minutes.
Step 11 -Serve the chicken topped with the sauce, the extra ranch dressing, the extra green onions, and the blue cheese.
