When we say Everything Onion Dip, we mean Everything Onion Dip! That means deeply softened yellow and red onions, fragrant chives and shallots, even a little dried onion so you don't miss even a little bit of that onion flavor! This creamy, tangy, savory dip will make anyone an onion-lover! Everything Onion Dip pulls out all the stops!
Ingredients
- 1 medium yellow onion
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 cup shallots, minced
- 1/2 cup red onions, diced
- 1/2 teaspoon granulated garlic
- 1 tablespoon dried onion, minced
- 3/4 cup mayonnaise
- 2 cups sour cream
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper
- 1/3 cup green onions, thinly sliced, plus more, to taste, optional, for garnish
- 1/2 cup fresh chives, thinly sliced, plus more, to taste, optional, for garnish
- chips, of your choice, for serving
Directions
Step 1 -Cut both ends off the yellow onion and cut it evenly into two halves.
Step 2 -Remove and discard the onion skin.
Step 3 -Place the onion halves on a cutting board with cut-sides down and make vertical slices against the grain, then turn and slice across the cuts to chop.
Step 4 -In a large skillet over high heat, heat the olive oil.
Step 5 -Transfer the onion into the oil, add the salt, and cook until the onions are deep brown in color, 7-8 minutes.
Step 6 -Add the shallots and the red onions and sauté until they start to soften and sweeten, 3-4 minutes.
Step 7 -Turn off the heat and stir in the garlic and the dried onion.
Step 8 -Set aside to cool completely, about 20 minutes.
Step 9 -In a bowl, combine the mayonnaise, the sour cream, the black pepper, the cayenne, and the cooled onion mixture, mixing until thoroughly combined.
Step 10 -Cover and chill in the refrigerator for at least 4 hours and up to overnight.
Step 11 -Transfer the dip from the refrigerator and stir in the green onions and the chives.
Step 12 -Transfer the dip into a serving bowl and garnish with the extra green onions and the extra chives.
Step 13 -Serve with the chips.
