There are many right answers to the question "how do you throw a party in autumn?" "With a Fall Party Cake," is, however, the most correct answer. You just can't go wrong with a cream cheese frosting, luscious and creamy and with just the right amount of tang. But of course, the cake has to be about the cake, and a tender pumpkin-flavor cake is just what the celebration calls for! Throw on some sprinkles, the streamers of the food world, and bam! Fall Party Cake will get everyone livened up and cheering, with tastebuds leading the way!
Ingredients
- For the cake:
- 15 ounces pumpkin puree
- 4 large eggs
- 1 cup vegetable oil
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 3 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon table salt
- For the frosting:
- 8 ounces cream cheese, room temperature
- 1/2 cup butter, room temperature
- 3 1/2 cups confectioners' sugar
- 1 teaspoon vanilla extract
- For the decoration:
- 2 tablespoons fall sprinkles, optional
- 1 tablespoon chocolate sprinkles, optional
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9×13-inch baking pan.
Step 3 -In a large mixer bowl, beat together the pumpkin, the eggs, the oil, the granulated sugar, the brown sugar, and 1 teaspoon of the vanilla until well combined.
Step 4 -Slowly stir the flour, the pumpkin pie spice, the baking powder, the baking soda, and the salt, into the pumpkin mixture and mix until just combined. Transfer to the prepared pan and smooth into an even layer.
Step 5 -Bake until the center springs back when lightly pressed, about 30-35 minutes. Let the cake cool to room temperature before decorating.
Step 6 -Place the room-temperature cream cheese and the butter in a large mixing bowl and beat until whipped together.
Step 7 -Slowly mix in the confectioners' sugar and the remaining vanilla. Once the mixture is no longer powdery, increase the speed and beat well for several minutes, until light and fluffy.
Step 8 -Spread the cream cheese frosting over the top of the cooled cake and add the fall sprinkles and the chocolate sprinkles, if desired.
Step 9 -Serve at room temperature.
