Ingredients

  • 1/2 cup fresh parsley sprigs, packed
  • 1/2 cup fresh mint leaves
  • 1/2 cup olive oil
  • 2 cloves garlic, peeled
  • 1/2 teaspoon black pepper
  • 1 (16-ounce) package feta cheese, crumbled
  • 3 tablespoons lemon juice
  • assorted fresh vegetables, to taste, washed, for serving

Directions

Step 1 -In a food processor, add the parsley sprigs, the mint leaves, the olive oil, the garlic cloves, and the black pepper, cover, and pulse until they are finely chopped.

Step 2 -Add the feta cheese and the lemon juice to the parsley mixture, cover, and process until it is creamy.

Step 3 -Transfer the dip to a medium bowl with a lid and refrigerate until ready to serve.

Step 4 -Place the dip in a serving dish and serve with the assorted vegetables.
