Ingredients

  • 8 large eggs
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon water
  • kosher salt, to taste
  • black pepper, to taste
  • 1 tablespoon olive oil or unsalted butter
  • 1 russet potato, diced, browned and cooked
  • 4 ounces kielbasa, thinly sliced, browned and cooked
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -In a large bowl, add the eggs, the Old Bay, the water, the salt, and the pepper and whisk to combine.

Step 2 -In a 10-inch nonstick skillet over medium heat, add the oil.

Step 3 -Add the egg mixture to the hot skillet and cook, while stirring it with a rubber spatula every few seconds, until the eggs are semi-soft, about 2-3 minutes. For more firm eggs, cook the eggs for an additional 1-2 minutes.

Step 4 -Add the cooked potatoes and the cooked kielbasa to the egg mixture and fold to combine.

Step 5 -Serve garnished with the parsley.
