This cake is rustic and charming and sweet, just like farm life! Farmhouse Buttermilk Cake is infused with the tangy richness of buttermilk and the delicate floral perfume of vanilla in each slice of the deeply golden cake! But it's the smoky molasses flavor of brown sugar that really makes the cake and the sticky pecan topping so enticing! Farmhouse Buttermilk Cake brings country life anywhere, and it's a welcome sight!
Ingredients
- For the cake:
- 1/4 cup butter, very soft
- 1 cup light or dark brown sugar, firmly packed
- 1 large egg
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the pecan topping:
- 3 tablespoons butter, melted
- 1/2 cup light or dark brown sugar, firmly packed
- 2 tablespoons half-and-half
- 1/8 teaspoon salt
- 3/4 cup pecans, diced
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9-inch round cake with baking spray or line it with parchment paper.
Step 3 -In a bowl, add 1/4 cup of the soft butter and 1 cup of the brown sugar and stir until well-combined. The mixture will not be fluffy yet.
Step 4 -Add the egg to the butter mixture and stir until smooth.
Step 5 -Add the buttermilk and the vanilla extract and stir until well-combined.
Step 6 -Sprinkle the flour, the baking soda, and 1/2 teaspoon of the salt evenly over the top of the butter mixture and stir until well-combined.
Step 7 -Pour the batter into the prepared pan.
Step 8 -Bake the cake until a toothpick inserted into the center comes out clean or when the cake springs back when lightly touched in the center, about 30 minutes.
Step 9 -During the last 10 minutes of baking time, in a bowl, add the remaining melted butter and the remaining brown sugar and stir to combine.
Step 10 -Add the half-and-half, the remaining salt, and the pecans and stir to combine. The glaze should be thick, but pourable.
Step 11 -After the cake has cooked for 30 minutes, pour the topping mixture over the cake and bake for an additional 10 minutes.
Step 12 -Transfer the cake from the oven and allow it to cool in the pan until the topping firms up, about 20 minutes.
Step 13 -Slice and serve.
