Ingredients
- 1 1/4 pounds chicken breasts, boneless, skinless, and cut into 1-inch pieces
- salt, to taste
- pepper, to taste
- 1/3 cup cornstarch
- 2 eggs beaten
- 3 tablespoons vegetable oil
- 1/3 cup buffalo hot sauce
- 1/2 cup brown sugar
- 1 tablespoon rice vinegar
- 1/4 teaspoon red pepper flakes, plus more to taste
- 1/4 cup green onions, sliced, optional, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch pan with cooking spray.
Step 3 -In a shallow dish or on a plate, season the chicken with salt and pepper.
Step 4 -Sprinkle the cornstarch over the chicken, tossing and turning it to evenly coat.
Step 5 -In a shallow dish or pie plate, pour the beaten eggs.
Step 6 -Dip the chicken in the egg mixture.
Step 7 -Over high heat in a large pan on the stove-top, heat the vegetable oil.
Step 8 -In a single layer, working in batches as necessary, sauté the chicken until golden brown, about 3-4 minutes per side.
Step 9 -Place the sautéed chicken in the prepared baking pan.
Step 10 -In a small bowl, whisk together the buffalo hot sauce, brown sugar, rice vinegar, and red pepper flakes.
Step 11 -Pour the sauce over the chicken in the pan.
Step 12 -Bake the chicken for 35 minutes, stirring once halfway through.
Step 13 -Remove the chicken from the oven, top with the green onions, and serve!
