Ingredients
- neutral oil, to taste, for oiling the grill grates
- 2 firm ripe peaches, quartered (about 1 pound total)
- 2 (5-ounce) packages baby arugula
- 1 cup feta cheese, crumbled
- 3/4 cup fresh mint leaves, torn
- 3/4 cup pistachios, toasted and roughly chopped
- 1/2 cup extra-virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon table salt
- 1/4 teaspoon black pepper
Directions
Step 1 -Preheat the grill to high heat, about 450-550 degrees F.
Step 2 -Using the neutral oil, generously oil the grill grates.
Step 3 -Place the peaches, cut-side down, on the oiled grill grates and grill, uncovered and flipping them frequently, until well-charred, about 4 minutes.
Step 4 -In a large bowl, add the arugula, the feta, the mint, and the pistachios and toss to combine.
Step 5 -In a medium bowl, add the extra-virgin olive oil, the vinegar, the lemon juice, the Dijon mustard, the honey, the salt, and the pepper and whisk until well-combined.
Step 6 -Drizzle the vinaigrette over the salad mixture and toss to combine.
Step 7 -Add the grilled peaches over the salad.
Step 8 -Serve.
