Full of tender cheese tortellini, nourishing spinach, and hearty Italian sausage, this loaded-up, chicken-broth-based soup will definitely warm you to the core. So, if it's a little cold outside or you just need something to warm your soul, Grandma's Favorite Sausage Soup is sure to do the trick!
Ingredients
- 1/2 pound bulk Italian sausage
- 1 small onion, thinly sliced
- 1 clove garlic, minced
- 1 (14.5-ounce) can reduced-sodium chicken broth
- 1/2 cup water
- 1 1/2 cups fresh spinach, torn
- 3/4 cup refrigerated cheese tortellini
- 2 tablespoons parmesan cheese, shredded, for garnish
- crushed red pepper flakes, to taste, for garnish
Directions
Step 1 -In a small saucepan over medium heat, cook the sausage, while crumbling, until it is no longer pink. Drain the excess grease.
Step 2 -Add the onions to the cooked sausage and cook, while stirring, until the onions are tender.
Step 3 -Add the garlic to the sausage-onion mixture and cook, about 1 minute.
Step 4 -Stir the chicken broth and the water into the sausage mixture and bring to a boil.
Step 5 -Reduce the heat and simmer the soup, about 10 minutes.
Step 6 -Return the soup to a boil.
Step 7 -Reduce the heat, then add the spinach and the tortellini to the soup.
Step 8 -Cook the soup until the tortellini is tender, about 7-9 minutes.
Step 9 -Serve the soup garnished with the parmesan and the red pepper flakes.
