Grandma's Homemade Rice Pudding really tastes like home. When things feel hard or we start missing the comfort of her cozy kitchen, we make this warm, cinnamon-y rice treat that makes everything feel better. There's nothing like it. It's simple but that's why we love it so much. So, the next time you're feeling a little homesick, make our Grandma's Homemade Rice Pudding... you'll feel better by the last spoonful!
Ingredients
- 5 cups whole milk, plus more, to taste
- 1/2 teaspoon pure vanilla extract
- 1/3 cup granulated sugar
- 1/4 teaspoon cinnamon, plus more, to taste, for garnish
- ground nutmeg, to taste
- 1 teaspoon butter
- 1/2 cup Arborio rice
- 1/4 cup Champagne, can substitute white grape juice
Directions
Step 1 -In a saucepan over medium heat, add 5 cups of the milk, the vanilla, the sugar, 1/4 teaspoon of the cinnamon, and the nutmeg and cook until the sugar has dissolved.
Step 2 -Reduce the heat to low to keep the milk mixture warm.
Step 3 -In a large saucepan, melt the butter.
Step 4 -Add the rice to the butter and stir to coat.
Step 5 -Add the Champagne to the rice and cook, while stirring, until the liquid has absorbed.
Step 6 -Ladle the milk mixture, 1/2 cup at a time, into the rice mixture and stir after each new addition. Simmer, stirring occasionally, about 35 minutes.
Step 7 -Transfer the saucepan from the heat and stir the extra milk into the rice pudding, as needed, to achieve the desired consistency.
Step 8 -Serve the rice pudding garnished with the extra cinnamon.
