Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon fresh oregano, chopped
  • 1 1/2 pounds Kirby cucumbers, peeled, seeded, and sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 2 tablespoons fresh mint leaves
  • 2 tablespoons fresh flat-leaf parsley leaves
  • 2 tablespoons fresh dillweed, chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/2 cup crumbled feta cheese

Directions

Step 1 -In a small bowl, whisk the olive oil, the red wine vinegar, and the oregano together.

Step 2 -In a large bowl, toss the cucumbers, the tomatoes, the red onion, the mint leaves, the parsley, the dillweed, and the vinegar mixture together.

Step 3 -Season the salad with the salt and the pepper and drizzle with the dressing.

Step 4 -Sprinkle the salad with the feta and serve.
