Ingredients

  • For the sauce:
  • 1/4 cup hoisin sauce
  • 2 tablespoons less-sodium soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon jarred chili-garlic sauce
  • 1 tablespoon fresh mint, finely chopped
  • 1 teaspoon ground ginger
  • 1 clove garlic, minced
  • For the lettuce wraps:
  • 1 tablespoon coconut or avocado oil
  • 1 pound ground chicken, turkey, or pork
  • 1 (8-ounce) can water chestnuts, drained and diced
  • 1 large head Boston or butter lettuce, leaves separated
  • maifun rice sticks, to taste, for garnish
  • 4 scallions, sliced, for garnish

Directions

Step 1 -In a small bowl, add the hoisin, the soy sauce, the lime juice, the chili-garlic sauce, the chopped mint, the ginger, and the garlic and whisk to combine. Set it aside.

Step 2 -In a large skillet over medium-high heat, add the coconut oil.

Step 3 -Add the ground chicken to the heated oil and cook, while crumbling, about 3-5 minutes.

Step 4 -Add the water chestnuts and the sauce mixture to the ground chicken and cook, stirring frequently, until the meat is no longer pink and is cooked through, about 2-3 minutes.

Step 5 -Spoon the chicken mixture evenly into each of the lettuce leaves.

Step 6 -Serve the wraps garnished with the rice sticks and the scallions.
