Find the crown, because the king is here! The King-of-Summer Salad rules benevolently over both the season and all of the season's most refreshing salads! Rejoice in its sweet roasted corn robes and spicy jalapeño finery, with crown jewels of grape tomatoes and creamy avocado to really make each bite royally good! A regal and tangy dressing helps bring out the most of the garden-fresh flavors! Long may this King-of-Summer Salad reign!
Ingredients
- For the dressing:
- 1/3 cup fresh-squeezed lime juice, plus more, to taste, for coating the avocado
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons white wine vinegar
- 2 cloves garlic, finely minced
- 1 1/2 teaspoons salt
- freshly ground black pepper, to taste
- For the salad:
- 4 ears fresh corn, roasted, shucked, kernels sliced from the cobs
- 1 pint grape tomatoes, halved
- 2 fresh jalapeños, seeds and membranes removed, finely diced
- 4 ounces cotija cheese, crumbled
- 1/2 cup fresh cilantro, chopped
- 3 large, ripe avocados, diced
Directions
Step 1 -In a medium bowl, whisk 1/3 cup of the lime juice, the olive oil, the vinegar, the garlic, the salt, and the black pepper until thoroughly incorporated.
Step 2 -Place the corn in a very large bowl.
Step 3 -Add the tomatoes, the jalapeños, the cotija cheese, and the cilantro to the corn.
Step 4 -Pour the dressing over the top and gently mix the salad together until well-combined.
Step 5 -Cover and refrigerate the salad until the flavors meld together, about 2 hours.
Step 6 -Just before serving, toss the avocados in the extra lime juice and gently stir them into the salad.
Step 7 -Serve.
