Ingredients

  • 5 slices bacon
  • 2 cups yellow onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 cup long-grain rice
  • 1 (16-ounce) can diced tomatoes
  • 3/4 cup chicken broth
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon hot pepper sauce

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly grease a 2-quart baking dish.

Step 3 -In a medium skillet over medium heat, add the bacon slices and cook, flipping them once, until crisp, about 8-10 minutes.

Step 4 -Transfer the bacon to a paper-towel-lined plate, reserving the drippings in the skillet.

Step 5 -Once the bacon slices are cool enough, crumble the bacon. Set them aside.

Step 6 -In the reserved bacon drippings over medium-high heat, add the yellow onions, the celery, and the bell peppers and cook, stirring often, until the vegetables are tender, about 5-6 minutes.

Step 7 -Add the rice, the tomatoes and their juices, the chicken broth, the salt, the black pepper, the cayenne pepper, and the hot pepper sauce to the onion mixture and stir to combine.

Step 8 -Spoon the rice mixture into the prepared baking dish.

Step 9 -Cover the baking dish with foil and bake until the rice is tender, about 40-45 minutes.

Step 10 -Top the rice bake with the reserved bacon crumbles.
