Ingredients

  • 1 cup white melting chocolate
  • 1/3 cup heavy whipping cream
  • 3 tablespoons unsalted butter
  • 1/2 cup cookie butter
  • salt, to taste
  • 1 (10-ounce) bag mini-marshmallows, divided
  • 1 1/2 tablespoons milk
  • 3 cups puffed rice cereal
  • 1 cup speculoos cookies, chopped, plus more, to taste, whole, for garnish

Directions

Step 1 -In a medium, heatproof bowl, add the white chocolate.

Step 2 -In a separate, microwave-safe bowl, add the heavy cream and heat it in the microwave until steaming and bubbly, about 1 minute.

Step 3 -Pour the warmed heavy cream over the white chocolate and let it sit for 30 seconds.

Step 4 -Whisk the white chocolate and the cream together until combined.

Step 5 -Chill the white chocolate-cream mixture until it thickens.

Step 6 -Line an 8x8-inch square baking dish with parchment paper.

Step 7 -In a large saucepan over medium heat, add the butter, the cookie butter, and the salt and heat, while stirring gently, until melted and smooth.

Step 8 -Add all but 1 cup of the marshmallows and the milk to the butter mixture and stir until the marshmallows are melted and the mixture is smooth and combined.

Step 9 -Transfer the saucepan from the heat.

Step 10 -Add the rice cereal and 1 cup of the chopped cookies and mix to combine.

Step 11 -Add the remaining marshmallows and mix to combine.

Step 12 -Press the marshmallow mixture evenly into the prepared baking dish.

Step 13 -Spread the cooled white chocolate-cream mixture on top of the marshmallow mixture.

Step 14 -Press the extra whole cookies onto the surface of the white chocolate-cream topping.

Step 15 -Chill the bars until set, about 20 minutes.

Step 16 -Slice and serve.
