You know the marshmallow treats from your childhood? Marshmallow Cookie Bars are here to make those treats pale in comparison... and reawaken your inner kid in the process! The marshmallow and crispy rice cereal are as sticky-sweet as you remember, but now they've been mixed with the warm spice and richness of cookie butter. Then they get topped with a creamy white chocolate topping and speculoos cookies! Marshmallow Cookie Bars bring more joy to an already joyous dessert!
Ingredients
- 1 cup white melting chocolate
- 1/3 cup heavy whipping cream
- 3 tablespoons unsalted butter
- 1/2 cup cookie butter
- salt, to taste
- 1 (10-ounce) bag mini-marshmallows, divided
- 1 1/2 tablespoons milk
- 3 cups puffed rice cereal
- 1 cup speculoos cookies, chopped, plus more, to taste, whole, for garnish
Directions
Step 1 -In a medium, heatproof bowl, add the white chocolate.
Step 2 -In a separate, microwave-safe bowl, add the heavy cream and heat it in the microwave until steaming and bubbly, about 1 minute.
Step 3 -Pour the warmed heavy cream over the white chocolate and let it sit for 30 seconds.
Step 4 -Whisk the white chocolate and the cream together until combined.
Step 5 -Chill the white chocolate-cream mixture until it thickens.
Step 6 -Line an 8x8-inch square baking dish with parchment paper.
Step 7 -In a large saucepan over medium heat, add the butter, the cookie butter, and the salt and heat, while stirring gently, until melted and smooth.
Step 8 -Add all but 1 cup of the marshmallows and the milk to the butter mixture and stir until the marshmallows are melted and the mixture is smooth and combined.
Step 9 -Transfer the saucepan from the heat.
Step 10 -Add the rice cereal and 1 cup of the chopped cookies and mix to combine.
Step 11 -Add the remaining marshmallows and mix to combine.
Step 12 -Press the marshmallow mixture evenly into the prepared baking dish.
Step 13 -Spread the cooled white chocolate-cream mixture on top of the marshmallow mixture.
Step 14 -Press the extra whole cookies onto the surface of the white chocolate-cream topping.
Step 15 -Chill the bars until set, about 20 minutes.
Step 16 -Slice and serve.
