Ingredients

  • 1 (20-ounce) can crushed pineapple in juice
  • 1 (3-ounce) package island pineapple-flavored gelatin
  • 1 (8-ounce) container frozen whipped topping, thawed
  • 2 cups miniature marshmallows
  • 1 cup unsweetened shredded coconut
  • 1/2 cup macadamia nuts, toasted, chopped, plus more, to taste, for garnish

Directions

Step 1 -In a large bowl, add the pineapple and their juices and the gelatin and stir to combine.

Step 2 -Add the whipped topping to the pineapple mixture and fold until fully combined.

Step 3 -Add the marshmallows, the coconut, and 1/2 cup of the macadamia nuts to the pineapple mixture and fold to combine.

Step 4 -Cover the bowl and refrigerate until the pineapple mixture is chilled and thickened, about 2 hours.

Step 5 -Serve garnished with the extra macadamia nuts.
