Aww, look at them! So tiny, yet so delicious! Mini Loaves are little meatloaves made in muffin cups (how cute is that?) with all the tender, beefy goodness that implies! But their size is just the tip of the iceberg! Mini Loaves are also Tex-Mex-inspired, mixing vibrant salsa and Mexican cheese blend into each one of the savory sensations! There is nothing mini about the flavors going on here!
Ingredients
- 1 pound lean ground beef
- 1/2 cup onions, finely chopped
- 1 egg
- 12 saltine crackers, finely crushed
- 1 1/2 cups Mexican-style four cheese blend, finely shredded, divided
- 1 cup thick and chunky salsa, divided
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Spray 12 muffin cups with nonstick spray.
Step 3 -In a bowl, mix the ground beef, the onions, the egg, the cracker crumbs, 1 cup of the cheese, and 1/2 cup of the salsa until they are just blended.
Step 4 -Press the meat mixture into the prepared muffin cups.
Step 5 -Use the back of a spoon to make indentations in the center of the meatloaves.
Step 6 -Place the muffin pan on a foil-covered baking sheet.
Step 7 -Bake until the meatloaves are cooked through, about 20-25 minutes.
Step 8 -Top each meatloaf with the remaining salsa and the remaining cheese.
Step 9 -Bake the mini loaves until the cheese has melted, about 3 minutes.
Step 10 -Serve.
