Mojo Chicken Bowl isn't just a catchy name: this dish really does have the mojo and it will help you find your own after a long day! Savory chicken is marinated in a sunny and spicy marinade before being grilled to juicy perfection, then paired with grilled onion rings and fluffy yellow rice. Fresh, creamy avocados and some fragrant cilantro boost your energy and excitement with every bite. Don't let the cooking time fool you; Mojo Chicken Bowl isn't too hard to make and will help you get your groove back!
Ingredients
- 1 cup refrigerated orange juice
- 1/3 cup fresh oregano leaves, chopped and loosely packed
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 10 medium cloves garlic, finely chopped
- 1 medium jalapeño chili, unseeded and thinly sliced
- 2 teaspoons kosher salt, divided
- 8 (4-ounce) chicken thighs, boneless and skinless
- 2 medium-size red onions, sliced into 1/2-inch-thick rings
- 1 (10-ounce) package yellow rice, prepared according to package directions
- 2 (6-ounce) medium avocados, diced
- fresh cilantro, optional, chopped
- lime wedges, optional, for serving
Directions
Step 1 -Stir together the orange juice, the oregano, the olive oil, the lemon juice, the lime juice, the garlic, the jalapeño, and 1 teaspoon of the salt in a large bowl.
Step 2 -Add the chicken and toss it to coat.
Step 3 -Cover the bowl and chill for at least 1 hour.
Step 4 -Oil the grill grates.
Step 5 -Preheat the grill to medium-high.
Step 6 -Place the onion rings on the oiled grates and grill, uncovered, until charred on both sides, about 6-8 minutes.
Step 7 -Coarsely chop the charred onions.
Step 8 -Transfer the onions to a medium bowl and cover.
Step 9 -Transfer the chicken from the marinade to a plate, letting the excess drip off. Sprinkle the chicken evenly with the remaining salt.
Step 10 -Using tongs, transfer the chicken to the grates.
Step 11 -Grill, uncovered, until a thermometer inserted into the thickest part of the thigh registers 165 degrees F, about 6-7 minutes per side.
Step 12 -Transfer the chicken to a clean plate and let rest for 5 minutes.
Step 13 -Divide the rice, the avocados, the onion rings, and the chicken among 4 bowls.
Step 14 -Garnish with the cilantro and serve with the lime wedges.
