Ingredients
- 1/4 pound baby red potatoes, washed and cut into quarters
- 1 medium carrot, peeled and thickly sliced
- 2 cloves garlic, whole and peeled
- 1 tablespoon olive oil, divided
- 1/4 teaspoon kosher salt, divided
- 1/4 teaspoon black pepper, divided
- 1/4 teaspoon dried rosemary, divided
- 1 (6-8-ounce) sirloin steak, cut into 1/2-inch-thick slices
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -On a 9x13-inch sheet pan, add the potatoes, the carrots, and the garlic cloves in a single layer.
Step 3 -Drizzle the potato mixture with 1/2 tablespoon of the olive oil.
Step 4 -Season the potato mixture with 1/8 teaspoon of the salt, 1/8 teaspoon of the black pepper, and 1/8 teaspoon of the dried rosemary and toss until evenly coated.
Step 5 -Transfer the sheet pan to the oven and roast the potato mixture for 20 minutes.
Step 6 -In a bowl or a rimmed plate, add the steak slices, the remaining olive oil, the remaining salt, the remaining black pepper, and the remaining dried rosemary and toss well to coat the meat.
Step 7 -Add the seasoned steak slices to the sheet pan, nestling them between the potato mixture.
Step 8 -Roast until the potatoes and the carrots are tender and golden, and the steak slices reach an internal temperature of 135 degrees F for medium-rare doneness, about 5 minutes, 145 degrees F for medium doneness, about 6-7 minutes, or 155 degrees F for well done, about 8 minutes.
Step 9 -Serve hot.
