Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1/4 cup dry white wine
  • 2 sprigs fresh thyme
  • 8 cups chicken stock
  • 1 pound ground chicken breast
  • 1/4 cup plain dry breadcrumbs
  • 1 large egg
  • 2 tablespoons parmesan cheese, grated, plus more, to taste, for serving
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 2 tablespoons fresh basil, chopped, plus more, whole leaves, to taste, for garnish
  • kosher salt, to taste
  • ground black pepper, to taste
  • 6 cups assorted vegetable noodles, such as zucchini spirals, butternut squash spirals, and carrot spirals
  • 1 pint cherry tomatoes, halved
  • 1 tablespoon red wine vinegar

Directions

Step 1 -In a large pot or Dutch oven over medium heat, add the olive oil.

Step 2 -Add the onions and the garlic to the hot oil and cook, while stirring occasionally, until golden-brown, about 4-6 minutes.

Step 3 -Add the wine and the thyme sprigs and cook until the wine thickens, about 1 minute.

Step 4 -Add the chicken stock and cover the pot.

Step 5 -Bring the soup mixture to a simmer.

Step 6 -In a bowl, add the ground chicken, the breadcrumbs, the egg, 2 tablespoons of the parmesan, the parsley, 2 tablespoons of the chopped basil, the salt, and the pepper and gently stir to combine.

Step 7 -Form the ground chicken mixture into about 30 meatballs.

Step 8 -Carefully drop the meatballs into the simmering soup mixture.

Step 9 -Reduce the heat to low and cover the pot.

Step 10 -Simmer until the meatballs are cooked through, reaching an internal temperature of 165 degrees F, about 7-9 minutes.

Step 11 -Add the vegetable noodles and the tomatoes and cook, while stirring occasionally, until the noodles are tender, about 3-4 minutes.

Step 12 -Add the vinegar and stir to combine.

Step 13 -Taste the soup for seasoning and add the salt and the pepper, as needed.

Step 14 -Garnish with the extra parmesan and the extra basil leaves and serve immediately.
