Ingredients
- 4 (6-ounce) chicken breasts, boneless and skinless, patted dry
- 1 1/2 tablespoons taco seasoning
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 1 1/2 cups salsa
- 1 cup Mexican-blend cheese, shredded
- 2 tablespoons fresh cilantro, chopped
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Evenly season both sides of each of the chicken breasts with the taco seasoning, the salt, and the pepper.
Step 3 -In a large, oven-safe skillet over medium-high heat, add the oil.
Step 4 -Add the seasoned chicken breasts to the heated oil and sear on all sides. It is okay for them to not be cooked through. Transfer them to a plate.
Step 5 -Transfer the skillet from the heat and evenly add 1/2 of the salsa to the pan.
Step 6 -Nestle the seared chicken breasts into the salsa in the skillet.
Step 7 -Evenly spoon the remaining salsa over the top of each of the chicken breasts.
Step 8 -Bake the chicken breasts until they reach an internal temperature of 165 degrees F, about 20-30 minutes.
Step 9 -Evenly sprinkle the cheese over each of the chicken breasts and bake until the cheese is melted, about 4-5 minutes.
Step 10 -Serve the salsa chicken garnished with the cilantro.
