For when seaside journeys aren't feasible (or aren't enough) to satisfy your nautical cravings, Oven-Baked Tilapia is a delicious addition to your sea-loving fare! The parmesan cheese and lemon pepper seasoned crust shines through on the tender tilapia fillets for the perfect amount of crunch, sharpness, and brightness. Ingredients
- For the fish:
- 3/4 cup parmesan cheese, freshly grated, plus 1/4 cup, freshly shredded, divided
- 1 tablespoon lemon pepper seasoning
- 1 tablespoon parsley, freshly chopped
- 1/8 teaspoon kosher salt
- 4 (4-ounce) tilapia fillets
- 1 tablespoon olive oil
- Optional, for serving:
- 1/4 cup green onions, diced
- 1 lemon, cut into wedges
- parsley, to taste, freshly chopped
- asparagus, to taste, cooked and warm
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line an 18x26-inch baking sheet with aluminum foil.
Step 3 -In a large shallow bowl, add 3/4 cup of the grated parmesan cheese, the lemon pepper seasoning, 1 tablespoon of the parsley, and the salt and whisk to combine.
Step 4 -On a large platter, add the tilapia fillets and evenly coat them with the olive oil.
Step 5 -Add the tilapia fillets to the parmesan mixture and evenly coat them with the mixture by hand, pressing lightly to make sure the coating adheres.
Step 6 -Lightly sprinkle the top of the coated tilapia fillets with the remaining shredded parmesan cheese.
Step 7 -Transfer the fillets to the prepared baking sheet.
Step 8 -Bake until the coated tilapia fillets are opaque and reach an internal temperature of 145 degrees F in the thickest portion, about 10 minutes.
Step 9 -Optionally, switch the oven to broil and broil until the coating is slightly crispy, about 1-2 minutes. Be careful not to burn the fillets.
Step 10 -Garnish with the green onions, the lemon wedges, and the extra parsley.
Step 11 -Serve with the asparagus.
