Ingredients
- 1 tablespoon olive oil, plus more for the baking sheet
- 3/4 cup unsalted peanuts
- 3 slices white sandwich bread, torn into small pieces
- 1 1/2 teaspoons coarse salt, plus more to taste
- 1/4 teaspoon ground pepper, to taste
- 2 eggs, large
- 4 chicken breast halves, boneless and skinless
Directions
Step 1 -Preheat the oven to 475 degrees F.
Step 2 -Line a baking tray with foil and brush lightly with olive oil, then set it aside.
Step 3 -Using a food processor, pulse the peanuts and bread together until it is coarsely ground.
Step 4 -Transfer the processed mixture to a wide-rimmed mixing bowl.
Step 5 -Mix in the olive oil, about 1 1/2 teaspoons of the salt, and 1/4 teaspoon of the pepper.
Step 6 -Using a large mixing bowl, whisk in the eggs, and season generously with salt and pepper.
Step 7 -Add the chicken breast halves to the egg mixture, turning to coat each of the sides.
Step 8 -Doing one at a time, dredge the chicken halves in the peanut breading, lightly pressing it onto the chicken.
Step 9 -Transfer the breaded chicken to the prepared baking tray.
Step 10 -Bake the breaded chicken until it is lightly browned and golden, about 15 minutes.
Step 11 -Check the internal temperature of the chicken to make sure the internal temperature is 165 degrees F.
Step 12 -Serve!
