Ingredients
- 1/4 cup butter, divided
- 2 pounds pork chops, boneless
- 1/2 teaspoon paprika
- kosher salt, to taste
- ground black pepper, to taste
- 1 (8 ounce) package sliced fresh mushrooms
- 4 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 2 tablespoons all-purpose flour
- 2 cups beef broth
Directions
Step 1 -Heat a large cast-iron skillet over medium-high heat.
Step 2 -Add 2 tablespoons of the butter.
Step 3 -Season both sides of the pork chops with paprika, salt, and pepper.
Step 4 -Place the pork chops into the skillet and sear until golden brown on both sides and no longer pink in the center, about 2-4 minutes per side.
Step 5 -Remove the pork chops from the skillet onto a plate lined with paper towels and set them aside.
Step 6 -Add the remaining butter to the same skillet over medium-high heat.
Step 7 -When the butter is melted, add the mushrooms to the skillet and cook until they are golden and most of the excess moisture has evaporated, about 5 minutes.
Step 8 -Add the garlic and mustard to the skillet and cook until the garlic is fragrant, about 1 minute.
Step 9 -Add the flour to the skillet and stir until no lumps remain.
Step 10 -Slowly add the beef broth, whisking until well incorporated.
Step 11 -Season with salt and pepper.
Step 12 -Reduce the heat to medium so that the sauce is just simmering.
Step 13 -Cook, stirring often, until the sauce thickens, about 5 minutes.
Step 14 -Taste for seasoning.
Step 15 -Place the pork chops back in the skillet and coat with the sauce.
Step 16 -Cook until the pork chops are heated through, about 1 minute.
Step 17 -Serve!
