This is a great way to use up any leftover turkey from your holiday celebrations: by turning it into a deliciously toasty and savory breakfast sandwich! Perfectly cooked eggs and savory turkey are a match made in heaven, especially when you top them with whatever sandwich favorites suit your fancy! Let's make breakfast a little wild with the Poultry Palooza!
Ingredients
- For the sandwiches:
- 4 slices bread, of your choice and toasted
- neutral-flavored oil, to taste
- 2 eggs
- 1 turkey breast, leftover, halved
- Optional toppings:
- salt, to taste
- black pepper, to taste
- cranberry sauce, to taste
- cheese, to taste, of your choice
- tomatoes, to taste, sliced
- avocado, to taste, sliced
Directions
Step 1 -On two serving plates, add 2 slices of the toast.
Step 2 -In a small, nonstick skillet over medium heat, add the oil.
Step 3 -Add the eggs to the hot oil and cook them, flipping them once, until they reach your desired level of doneness, about 2-4 minutes.
Step 4 -Add 1 of the eggs to 1 slice of toast on each of the serving plates.
Step 5 -In the same skillet over medium heat, add the turkey halves and cook until heated through, about 3 minutes.
Step 6 -Add the turkey evenly to each of the sandwiches.
Step 7 -Add your favorite sandwich toppings.
Step 8 -Close the sandwiches with the remaining slices of toast and serve.
