Make way for the Queen! Queen of the Greens that is! This is a royally delicious sandwich, a perfect blend of vegetable classics like sharp peppery watercress, creamy and savory avocado, and crisp alfalfa. With a creamy, herbaceous, and lemony spread, Queen of the Greens doesn't even need a crown. It knows its flavor speaks for itself.
Ingredients
- 1/2 cup plain whole-milk Greek yogurt
- 1/2 cup fresh parsley leaves, chopped
- 2 tablespoons fresh tarragon leaves, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon capers, rinsed, chopped
- 1 clove garlic, grated
- 1 1/2 teaspoons lemon zest
- 1/4 cup lemon juice, divided
- 1 medium avocado, cut into 8 slices
- 1/4 teaspoon salt
- 4 slices hearty whole-wheat bread
- 1 cup watercress or spinach
- 1 cup cucumber, thinly sliced
- 1/2 cup alfalfa sprouts
Directions
Step 1 -In a medium bowl, add the yogurt, the parsley, the tarragon, the chives, the capers, the garlic, the lemon zest, and 2 tablespoons of the lemon juice and whisk to combine.
Step 2 -Season the avocado slices evenly with the salt and drizzle them with the remaining lemon juice.
Step 3 -On each slice of the bread, spread 2 heaping tablespoons of the yogurt mixture.
Step 4 -Evenly top 2 of the bread slices with the watercress, the cucumbers, the avocado slices, and the alfalfa sprouts.
Step 5 -Close the sandwiches using the remaining bread slices, yogurt-spread-side down.
Step 6 -Cut the sandwiches in half and serve immediately.
