"'Twas the night before Christmas, and all through the house, not a creature was stirring..." wait. Actually, yes there was. Didn't you hear our stomachs grumbling?! We're hungry and we must eat something festive to fulfill all our holiday dreams! Santa's Comin' Stuffed Turkey is sure to make us feel stuffed full. There is no better dish than this tender, cheesy, bacon-filled one to celebrate the jolly, scarlet-clad man making his way into town. If you play your cards right, he might even leave you a gift or two. Or he honestly might just stop by for a bite of Santa's Comin' Stuffed Turkey! He's a big fan of it, didn't you know?!
Ingredients
- 6 slices bacon, chopped
- 1 medium onion, chopped
- 2 (12-ounce) turkey breasts, boneless and skinless
- salt, to taste
- pepper, to taste
- 1/2 cup Mexican blend cheese, shredded
- 1 tablespoon olive oil
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -In a skillet, fry the bacon and the onion together until the bacon is crisp and the onion is translucent, about 6-8 minutes. Set it aside.
Step 3 -On a clean, flat surface, cut each of the turkey breasts in half horizontally without slicing all the way through, then open each of them up like a book into one bigger piece.
Step 4 -Place each of the butterflied turkey breasts between two pieces of parchment paper or plastic wrap.
Step 5 -Using a meat mallet, gently pound both of the turkey breasts to make them as thin as possible.
Step 6 -Season the breasts with the salt and the pepper.
Step 7 -Evenly top the turkey breasts with the cheese blend and the bacon mixture, leaving about a 1-inch border.
Step 8 -Roll up each of the turkey breasts as tight as possible and secure with butcher's twine or kitchen string.
Step 9 -In an oven-proof skillet, heat the olive oil over medium-high heat.
Step 10 -Cook the rolled turkeys in the hot olive oil until they are evenly browned on all sides, about 3 minutes on each side. Doing this in batches is recommended.
Step 11 -Place the skillet in the oven and roast until both of the turkey breasts' internal temperature reads 170 degrees F, about 45 minutes.
Step 12 -Slice and serve.
