This Seared Tilapia is one of the best meals you'll ever make, and it requires very minimal effort! What a deal! Get ready for a big plate of fluffy rice served alongside the most tender, yummy fillet of fish you've ever tasted! And it gets even better... top your fish with a sweet and spicy cucumber salad that will create a flavor concoction so phenomenal, you won't know what to do other than to just keep making it again and again. Seared Tilapia will definitely make you excited for dinnertime again!
Ingredients
- 1 cup long-grain white rice
- 2 tablespoons fresh lime juice
- 1 tablespoon ginger, grated
- 2 teaspoons honey
- 2 tablespoons plus 1 teaspoon olive oil, divided
- kosher salt, to taste
- pepper, to taste
- 2 scallions, thinly sliced
- 1 jalapeño pepper, optional, finely chopped
- 1/2 small pineapple, peeled, cored, cut into small pieces
- 1 small English cucumber, cut into small pieces
- 4 (6-ounce) tilapia fillets
Directions
Step 1 -Cook the rice according to the package directions.
Step 2 -In a large bowl, whisk the lime juice, the ginger, the honey, 2 tablespoons of the oil, the salt, and the pepper together.
Step 3 -Add the scallions, the jalapeño, the pineapple, and the cucumber to the lime mixture and toss to coat.
Step 4 -In a large nonstick skillet over medium heat, heat the remaining oil.
Step 5 -Season the fillets with the salt and the pepper.
Step 6 -Cook the fillets until they are golden-brown and reach an internal temperature of 145 degrees F, about 1-3 minutes per side.
Step 7 -Serve the fillets with the rice and top with the cucumber relish.
