When seafood is on your mind, you can whip up a fantastically flavorful meal in no time with Skillet Salmon & Cream Sauce. Why? Because it's easy and always delicious! Meaty salmon fillets are perfectly seasoned with the 3 c's – cumin, coriander, and cayenne pepper. Then, they're cooked until golden and served with an incredibly creamy, cilantro-lime sauce for just the right touch of yumminess. Ingredients
- For the cream sauce:
- 1/2 cup sour cream
- 2 green onions, roughly chopped
- 1/2 cup cilantro, packed, mostly leaves and some stems, plus more, to taste, for garnish
- 1 1/2 tablespoons fresh lime juice
- 1 clove garlic, sliced
- 1/4 teaspoon salt
- For the salmon:
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 (6-ounce) salmon fillets, skinless and about 1-inch-thick, patted dry
- 1 tablespoon olive oil
- lime wedges, to taste, for garnish
Directions
Step 1 -In a food processor, add the sour cream, the green onions, 1/2 cup of the cilantro, the lime juice, the garlic, and 1/4 teaspoon of the salt and process until the cilantro is very finely minced.
Step 2 -Let the cream sauce rest at room temperature until ready to serve.
Step 3 -In a small bowl, add the cumin, the coriander, the cayenne pepper, the remaining salt, and the pepper and whisk together.
Step 4 -Evenly season both sides of each of the salmon fillets with the spice mixture.
Step 5 -In a heavy, 12-inch, nonstick skillet over medium-high heat, add the olive oil and heat until it is shimmering.
Step 6 -Add the seasoned salmon fillets to the shimmering olive oil and cook, undisturbed, until they are golden-brown on the bottom, about 4 minutes.
Step 7 -Flip the salmon fillets and cook until they reach an internal temperature of 145 degrees F and are cooked through, about 2-3 minutes.
Step 8 -Place the salmon fillets on a serving plate and garnish with the extra cilantro and the lime wedges.
Step 9 -Serve the salmon fillets with the cream sauce.
