Ingredients

  • For the pork:
  • 1 1/2-2 pounds pork tenderloins
  • 1 medium onion, sliced
  • 1 jalapeño pepper, seeded and sliced
  • 4 slices orange rind, optional
  • 1 (12-ounce) cans cola soda
  • salt, to taste
  • pepper, to taste
  • 16 taco-sized flour or corn tortillas
  • Optional, for serving:
  • avocado, to taste, chopped
  • onions, to taste, chopped
  • jalapeños, to taste, sliced
  • fresh cilantro, to taste, chopped
  • cabbage, to taste, shredded
  • lime juice, to taste

Directions

Step 1 -Combine the pork, 1 of the sliced onions, 1 of the sliced jalapeños, the orange peel, the soda, the salt, and the pepper in a slow cooker.

Step 2 -Cover and cook on low for 8 hours.

Step 3 -Uncover and shred the meat using two forks.

Step 4 -Serve on the flour tortillas and top with your desired toppings.
