Ingredients

  • 1/4 cup vegetable oil
  • 16 cups fresh okra, trimmed, sliced or chopped
  • 2 cups onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 6 bulbs garlic, cloves peeled and pressed
  • 2 (14.5-ounce) can diced tomatoes, can substitute 4 cups fresh tomatoes, chopped
  • 1 tablespoon salt
  • 1/2 teaspoon cayenne pepper

Directions

Step 1 -In a large, heavy pot over medium-low heat, add the oil.

Step 2 -Add the okra slices to the heated oil and cook, stirring occasionally, until they are no longer slimy, about 1 hour.

Step 3 -Add the onions, the bell peppers, the celery, the pressed garlic, and the tomatoes to the okra and cook until the veggie mixture is soft, about 20 minutes.

Step 4 -Season the okra mixture with the salt and the cayenne pepper and stir to combine.

Step 5 -Serve.
