Bell pepper halves are loaded with a Tex-Mex trio of seasoned rice, black beans, and corn, and then topped with cheese for a melted masterpiece in nature's proverbial cup of deliciousness. Add SOS Peppers to your cooking rotation and watch as coming to the dinner table becomes urgent!
Ingredients
- For the peppers:
- 3 medium-large red and/or green bell peppers, halved lengthwise, seeded and deveined
- 2 (8.8-ounce) pouches white or brown rice, cooked
- 1 cup canned black beans, rinsed and drained
- 1/2 cup green onions, sliced
- 1/2 cup tomatoes, seeded and chopped
- 1/2 cup frozen corn
- 1 tablespoon taco seasoning mix
- 1/4 cup fresh cilantro, snipped
- 1 1/4 cups Mexican-style four cheese blend, shredded, divided
- 2 teaspoons hot pepper sauce, optional
- Optional, for garnish:
- green onions, to taste, sliced
- tomatoes, to taste, chopped
- cilantro, to taste, snipped
- hot pepper sauce, to taste
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a 15x10x1-inch baking dish with parchment paper.
Step 3 -Add the bell pepper halves, cut-side down, to the prepared baking dish.
Step 4 -Bake the pepper halves until they are warm and start to become tender, about 10 minutes.
Step 5 -In a large bowl, add the rice, the black beans, 1/2 cup of the green onions, 1/2 cup of the tomatoes, the corn, the taco seasoning, 1/4 cup of the cilantro, 1/2 cup of the cheese, and 2 teaspoons of the hot pepper sauce and stir to combine.
Step 6 -Transfer the baking dish from the oven to a wire rack and using tongs, turn the pepper halves over.
Step 7 -Evenly add the rice mixture to the cavity of the baked pepper halves.
Step 8 -Cover the baking dish loosely with foil.
Step 9 -Bake until the peppers are tender and the filling is heated through, about 25 minutes.
Step 10 -Transfer the stuffed pepper halves from the oven to a wire rack and discard the aluminum foil.
Step 11 -Evenly sprinkle the remaining cheese over the pepper halves.
Step 12 -Bake until the cheese is melted, about 5 minutes.
Step 13 -Top with the remaining green onions, the remaining tomatoes, the remaining cilantro, and the remaining hot pepper sauce.
Step 14 -Serve.
