Behold the power of pasta! When Spaghetti Greatness is in your presence (ahem, on your plate), you will bow down with gratitude for this awesome, flavorful dish! Any time bacon and heavy cream have a meeting of the minds with al dente spaghetti, well, then we know we have reached the pinnacle of royal pasta taste! Spaghetti Greatness is within you (you know, in your belly after you eat it, haha) and you will love this new hierarchy of flavor that reins over your dinner table! Here, here! To greatness and great taste!
Ingredients
- 1 (16-ounce) package spaghetti
- 12 ounces bacon, chopped into 1-inch-wide pieces
- 5 cloves garlic, peeled
- 2 tablespoons tomato paste
- 1 cup heavy whipping cream
- sea salt, to taste
- freshly ground black pepper, to taste
- parmesan cheese, to taste, grated, for garnish
Directions
Step 1 -In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Reserve 1/2 cup of the pasta water, then drain the rest.
Step 2 -While the spaghetti is cooking, in a large skillet over medium-low heat, add the bacon pieces and cook until they are crisp, about 7-9 minutes.
Step 3 -Place the cooked bacon on a paper-towel-lined plate and let it drain. Reserve 1 tablespoon of the bacon drippings in the skillet and discard the rest.
Step 4 -In the same skillet over medium heat, add the garlic cloves to the bacon drippings and cook, stirring frequently, until they are soft and fragrant, about 1-2 minutes.
Step 5 -Add the tomato paste to the garlic cloves and cook, stirring frequently, about 1 minute.
Step 6 -Add the heavy whipping cream to the sauce mixture and cook, whisking frequently, until it begins to bubble and thicken, about 2-3 minutes. If it becomes too thick, add enough of the reserved pasta water so that the sauce barely coats the back of a spoon. The sauce shouldn't be too thick.
Step 7 -Taste the sauce and season with the salt and the black pepper, as needed.
Step 8 -Toss the spaghetti noodles and the reserved bacon with the sauce until the pasta is well-coated.
Step 9 -Garnish the pasta with the parmesan cheese. Serve immediately and enjoy!
