A refreshing summer beverage is now a delicious dessert! Strawberry Lemonade Blondie Bars are literally packed with bright strawberries and vibrant, sunny lemon flavor, along with creamy white chocolate in a tender blondie! Then the blondies are covered in a strawberry-lemon glaze for even more summer fruit flavor, and a white chocolate drizzle just for fun! Strawberry Lemonade Blondie Bars are the right way to celebrate the season!
Ingredients
- For the bars:
- 2 1/4 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 sticks butter, room temperature
- 3/4 cup sugar
- 1 large egg, room temperature
- 1/4 cup lemon juice
- 1 cup fresh strawberries, diced
- 1/2 cup white chocolate chips
- For the topping:
- 3 strawberries, hulled and chopped
- 1 tablespoon lemon juice, plus more, to taste
- 1 cup powdered sugar, measured then sifted, plus more, to taste
- 1/4 cup white chocolate chips or candy melts
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a 7x11-inch or 9x9-inch pan with parchment paper.
Step 3 -In a bowl, add the flour, the baking powder, and the salt and whisk to combine.
Step 4 -In the bowl of a stand mixer or in a mixing bowl using a handheld mixer, add the butter and the sugar and beat on medium speed until combined and fluffy, about 2-3 minutes.
Step 5 -Scrape down the sides of the bowl with a spatula.
Step 6 -Add the egg to the butter mixture and beat until it is incorporated.
Step 7 -Add 1/4 cup of the lemon juice to the butter mixture and continue to beat, scraping down the sides of the bowl occasionally, until it is fully combined. The butter mixture may look curdled; that's normal.
Step 8 -Add the flour mixture to the butter mixture and beat until just combined into a batter.
Step 9 -Add 1 cup of the diced strawberries and 1/2 cup of the white chocolate chips to the batter and gently fold to combine.
Step 10 -Pour the batter into the prepared pan, smoothing it out evenly.
Step 11 -Bake until the edges are browned and a toothpick inserted into the center comes out clean, about 30-35 minutes for a 9x9-inch pan or 35-40 minutes for a 7x11-inch pan. Be careful not to over-bake.
Step 12 -Transfer the pan to a wire rack to cool.
Step 13 -In a food processor or a blender, add the remaining chopped strawberries and purée until smooth.
Step 14 -Over a bowl, strain out the solid parts of the strawberry purée so just the liquid remains.
Step 15 -In a bowl, add 1 tablespoon of the strawberry liquid, 1 tablespoon of the remaining lemon juice, and 1 cup of the powdered sugar and mix until thoroughly combined and a glaze forms. If the glaze is too thick, add the extra lemon juice or more of the strawberry liquid,a little at a time. If the glaze seems too thin, add the extra powdered sugar, a little at a time, until the desired texture is reached.
Step 16 -In a microwave-safe bowl, add the remaining white chocolate chips and microwave for 10-15-second intervals, stirring between each interval, until they are fully melted.
Step 17 -Add the melted chocolate to a pastry bag or a resealable plastic bag with a corner cut off.
Step 18 -Pour the strawberry-lemon glaze over the bars and quickly spread it out with a spatula.
Step 19 -Allow the glaze to set, about 1 minute.
Step 20 -Drizzle the melted white chocolate over the bars.
Step 21 -Slice and serve.
