If you're feeling a little weak and weary, beef up with this Strong-Man Pasta Salad! This bowl of bouncy bow tie pasta, juicy meat, flavorful veggies, and salty cheese will bring the big flex your lunch was missing. Muscle up your meal with Strong-Man Pasta Salad!
Ingredients
- 1 (16-ounce) box bow tie pasta
- 1 pound ground beef
- 2 teaspoons taco seasoning mix
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/3 cup extra-virgin olive oil
- 3 tablespoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can black beans, rinsed and drained
- 2 cups cherry tomatoes, halved or quartered
- 2 cups cheddar, shredded
- 4 green onions, thinly sliced
Directions
Step 1 -In a large pot of salted, boiling water, cook the bow tie pasta to al dente, according to the package directions.
Step 2 -Drain the water and pour the cooked bow tie pasta into a large bowl.
Step 3 -In a large skillet over medium-high heat, add the ground beef, the taco seasoning, the salt, and the pepper and cook, while crumbling, until it is no longer pink, about 6 minutes. Drain the excess grease.
Step 4 -In a small bowl, add the olive oil, the lime juice, the cumin, the salt, and the pepper and whisk to combine.
Step 5 -Evenly pour the olive oil mixture over the cooked bow tie pasta and toss to combine.
Step 6 -Add the cooked ground beef, the corn, the black beans, and the tomatoes to the bow tie pasta mixture and toss to combine.
Step 7 -Fold the cheddar and the green onions into the pasta salad.
Step 8 -Serve.
