This dish takes your basic slabs of pork and stuffs them full of a creamy, cheesy, spinach-y concoction that you'll be dreaming of... when you're not eating them, that is. These juicy chops of goodness are easy and quick to cook up but make such a huge difference at dinnertime. Try Stuffed Pork Chops once and you'll never go back to boring!
Ingredients
- 1 pound center-cut pork chop, boneless, thickly cut
- 1 (8-ounce) block cream cheese, softened
- 1/2 cup parmesan, shredded
- 1 cup spinach, chopped
- 1/2 teaspoon thyme leaves
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Use a sharp knife to gently cut a pocket lengthwise into each of the pork chops.
Step 3 -In a large bowl, add the cream cheese, the parmesan, the spinach, the thyme, and the oregano and stir to combine.
Step 4 -Evenly stuff the cream cheese mixture into the pockets of each of the pork chops, then use toothpicks to secure them.
Step 5 -Evenly season each of the pork chops with the salt and the pepper.
Step 6 -In a cast-iron skillet over medium-high heat, add the oil.
Step 7 -Evenly place the stuffed pork chops in the heated oil and cook, flipping them once, about 2 minutes per side.
Step 8 -Use an oven mitt to carefully transfer the cast-iron skillet to the oven and bake the stuffed pork chops until they reach an internal temperature of 145 degrees F, about 5-7 minutes.
Step 9 -Transfer the cooked pork chops to a plate and let them rest, about 5-10 minutes.
Step 10 -Serve.
