  • 1 tablespoon olive oil
  • 4 chicken breasts, boneless and skinless
  • salt, to taste
  • pepper, to taste
  • 1 (10-ounce) package cherry tomatoes, halved
  • 3 tablespoons pesto
  • 3 tablespoons crème fraîche
  • fresh basil, to taste

Directions

Step 1 -Heat the oil in a non-stick frying pan over medium-high heat.

Step 2 -Add the chicken and fry until golden brown and cooked through at 165 degrees F, about 6-7 minutes per side.

Step 3 -Season the chicken with the salt and the pepper.

Step 4 -Add the tomatoes to the pan, stirring until they soften, about 4-5 minutes.

Step 5 -Reduce the heat to medium-low.

Step 6 -Stir in the pesto and crème fraiche and cook until thickened, about 3-4 minutes.

Step 7 -Serve with the basil.
