Sweet Summer Skewers really bring that summer fun to your cookout! The skewers themselves are succulent, juicy, and coated in a sweet, tangy, and citrus-bright marinade, grilled to perfection until extra savory. They're served with sweet potatoes, coated in the same marinade, and steamed until tender on the grill... because isn't summer all about finding new ways to cook on the grill? Find the sweetness in the season with these Sweet Summer Skewers!
Ingredients
- canola oil, to taste, for oiling the grill grates
- 1 teaspoon lime zest plus 1/3 cup lime juice
- 1 tablespoon olive oil
- 1 tablespoon pure maple syrup
- 1 pound chicken thighs, boneless, skinless, and trimmed, cut into 1-inch pieces
- 2 small sweet potatoes, cut into 3/4-inch pieces
- salt, to taste
- black pepper, to taste
Directions
Step 1 -Prepare the grill for direct cooking and heat to medium.
Step 2 -Once hot, clean and lightly oil the grill grates with the canola oil.
Step 3 -In a bowl, whisk the lime zest, the lime juice, the olive oil, and the maple syrup together.
Step 4 -Transfer 1/2 of the lime syrup mixture to a small bowl and reserve for basting.
Step 5 -Add the chicken pieces and the sweet potatoes to the remaining marinade and toss to coat, then let the chicken and potatoes stand for 5 minutes.
Step 6 -Season the chicken and the potatoes with the salt and the pepper.
Step 7 -Thread the chicken onto skewers and discard the marinade.
Step 8 -Wrap the sweet potatoes tightly in a foil envelope.
Step 9 -Place the foil envelopes on the grill and grill until the potatoes are tender, about 25 minutes.
Step 10 -At the same time, place the chicken skewers on the grill and cook, covered, turning the skewers occasionally and brushing them with the reserved marinade, until the meat reaches an internal temperature of 165 degrees F, about 10-15 minutes.
Step 11 -Serve the chicken and the sweet potatoes together.
