Ingredients

6 tablespoons taco seasoning
2 tablespoons tomato paste
1/4 cup green chiles, chopped
2 large eggs
3/4 cup plain breadcrumbs
1/4 cup cilantro, chopped
2 pounds ground beef

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Spray a 9x13-inch baking dish with cooking spray.

Step 3 -In a large bowl, whisk together the taco seasoning, the tomato paste, the green chiles, the eggs, the breadcrumbs, and the cilantro until well-combined.

Step 4 -Gently mix in the beef until combined.

Step 5 -Roll the beef mixture into 1-inch balls.

Step 6 -Place the balls into the prepared baking dish.

Step 7 -Bake until the meatballs are cooked through at 160 degrees F, about 20-22 minutes.

Step 8 -Serve hot.
